Spetsiotiko: Baked fish from Spetses


Ingredients
1½ kilo of sea bass or sea bream1 cup of olive oil1 cup of dry white wine450 g of ripe tomatoes, grated or 1 package of crushed tomatoes½ cup of breadcrumbs, grated3 cloves of garlic⅓ cup of chopped parsleySalt and pepper
Method
Sprinkle the fish with salt and pepper and let it drain for half an hour.Grease a baking tray with olive oil and place the fish on it.In a bowl, combine the tomatoes with olive oil, wine, garlic, and parsley, and mix well.Pour the sauce over the fish, ensuring it is thoroughly coated, and sprinkle with half of the breadcrumbs.Place in a preheated oven at 180°C to cook. When golden brown, turn the fish over, brush generously with sauce, sprinkle with the remaining breadcrumbs, and continue cooking until fully cooked. During baking, brush the fish with the sauce to prevent it from drying out.
